Enchiladas Casserole

From the Sagebrush Inn in Taos, New Mexico.
Enchilada Casserole

1 lb. ground beef
2 tbsp. shortening
2 tbsp. chili powder
6 tbsp. flour
garlic
salt and pepper to taste
1 qt. water
12 corn tortillas
1 1/2 cups chopped onion
1 1/2 cups grated longhorn cheese


Braise ground beef in shortening. Add chili, flour and other seasonings. Cook 5 more minutes. Add water and bring to a boil. Cook 8 to 10 minutes.

Dip tortillas in hot deep fat. Build up alternate layers of tortillas, onion, cheese and chili in an 8 inch deep casserole. Bake at 375 for 20 to 25 minutes until bubbly. 6 servings.
