Chicken Enchiladas

Chicken Enchiladas

One cooked chicken, meat shredded (or 3-4 cups mixture of whatever seafood or fish)
2 small cans of chopped jalapeno's
2-3 chopped scallions
2 small cans chopped olives
one package enchalada sauce
garlic
pepper
salt
cumin
large flour tortillas
grated yellow cheese
red chili pepper
salsa


Make enchalada sauce according to directions. Cook chicken and pull apart (or peel shrimp and/or crab).
Use a "shake" of all the seasonings and mix with enchalada sauce.

Take flour tortilla and roll up using filing, some green chilis, some grated cheese, some salsa.

Roll up and place in sprayed (mazola no-stick) baking pan. Do this with all the tortillas and mixture.

Cover with enchalada sauce, more grated cheese and scallions. Bake in 350 degree oven for about 30 minutes.
