Enchiladas

Enchiladas

2 tbl. olive oil
1/2 cup chopped onion
1 clove garlic, minced
2 tsps. To 1 tbl. chili powder, to taste
1 cup tomato puree
1/2 cup chicken or beef stock
salt and pepper to taste
1 tsp. cumin
shredded mozzarella or longhorn cheese
flour tortillas
finely minced raw onion


Heat oven to 350 degrees.

In a heavy saucepan heat, oil and saute 1/2 cup onion and garlic until tender. Add chili powder, tomato puree, stock, salt, pepper and cumin.

Spread some sauce over tortilla and fill centers with equal quantities of raw onion and cheese. Roll flour tortillas and place them seam side down in an ovenproof dish.

Pour more sauce over tops and sprinkle with Shredded Mozzarella or longhorn cheese. Heat throughly in oven about 15 minutes.

Makes about 2 dozen
