Black Bean Patties with Lime and Cilantro

From Southern Living

2 tsp. oil
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1 tbl. minced jalapeno pepper
1 tsp. chili powder
1/2 tsp. dried oregano
1/2 tsp. ground cumin
1/4 tsp. salt
2 cloves of garlic
1 (16 ounce) can of black beans-drained
1 1/2 cups dry bread crumbs
1/4 cup yellow corn meal
3 tbl. fresh minced Cilantro
1 tbl. fresh lime juice


Heat oil in skillett and saute the next 9 ingredients until tender. Add black beans and heat for 1 minute; set aside. Combine the remaining ingredients; add bean mixture and blend.

Remove 1 cup if bean mixture and puree in food processor. Add puree bean mixture and 1/4 cup (1 oz.) Shredded Monterey Jack cheese mixture and mix well.

Shape into patties and brown in skillet sprayed with PAM. Brown on both sides, approx. 3-4 minutes.

Serve with Salsa and Sour Cream.
