Mexican Rice

2 cups cooked rice
1/4 cup chopped green pepper
1/2 cup chopped green onion
1/4 cup chopped celery
l (14.5 oz.) can diced tomatoes
salt and pepper
1 tsp. cayenne pepper
1 (16 oz.) can black beans drained and rinsed


Saute the pepper, onion and celery til tender. Add seasonings, then tomatoes and black beans. Heat through. Add rice;stir. Serve immediately.

If you don't like the spicy taste, leave out the cayenne pepper and add some spanish paprika.
