Mexican Rice

Mexican Rice

2 Tbsp. oil
1 Cup uncooked rice
1 (14 oz.) can stewed tomatoes (or just canned tomatoes)
1 small onion, minced
1/4 Cup green pepper, chopped
2 tsps. salt
1 tsp. chili powder
1/2 tsp. cumin
2 Cups water


In large skillet, heat oil and add rice. Saute, stirring for 5 minutes or until evenly browned. Add all ingredients and mix well.

Cover with a lid and simmer until rice is tender, approx. 30 minutes. Remove lid and allow to dry a bit.

Serves 6
