Beef Quesadilla Pie

1 lb. ground beef
1 cup salsa (I like garlic salsa)
1 (4.5 oz.) can chopped green chilies
1/4 cup ripe olives, chopped
2 pie crusts (such as Pillsbury refrigerated)
4 oz. cheddar cheese, shredded


Preheat oven to 425 degrees F. Brown beef; drain. Stir in salsa, chilies and olives.

Place one pie crust on greased cookie sheet. Spoon on mixture to 3/4" from the edge of the crust. Sprinkle with cheese. Top with second crust. Seal edges with fork. Cut slits in to vent.

Bake in a preheated 425 degree oven for 17-27 minutes or until crust is brown. You may need to put foil around the edges of the crust to keep from browning too much.

Serve with your choice of toppings. Toppings: Shredded lettuce, chopped green onion, chopped tomatoes, sour cream, guacamole, extra cheese.
