Cheesy Chicken Quesadillas
8 oz. Mexican blend shredded cheese, or Monterey Jack
2 to 3 green onions, chopped
1 to 2 pickled jalapeno peppers, finely chopped, or fresh seeded jalapenos to taste
2 Tablespoons cilantro, chopped (more or less to taste)
1/2 teaspoon cumin
1 package Mexican seasoned cooked chicken
6 to 8 flour tortillas
butter or Pam or spray butter or oil (to cook them with)
sour cream, salsa, guacamole
Combine 1st 5 ingredients; stir well. Add chicken (as much or as little as you want). Take mixture and divide among 3 or 4 tortillas. Top them with the remaining tortillas.
Cook quesadillas in a skillet over medium or medium-high with one of the things listed above. Lightly brown on each side. Cut each quesadilla in 6 or 8 wedges and serve with sour
cream, salsa and guacamole.
