Hot Mango Salsa 
1 tbsp. vegetable oil 
1 large onion, finely chopped 
2 green chilies, seeded and finely chopped 
1 ripe mangoes, peeled and diced 
1 ripe tomatoes, diced 
Juice from 2 limes 
1 tbsp. brown sugar 
Salt to taste 
Freshly ground black pepper to taste 
In a small saucepan, heat oil.  
 
Cook onion and chilies for about 5 minutes at a gentle heat to just soften.  
 
Add tomatoes and mangoes to pan.  
Cover and cook for 30 minutes at a low temperature. 
Stir in remaining ingredients, season to taste and add more brown sugar if desired.  
Serve hot or cold. 
Note: Great as a dip with tortilla chips.
