Fresh Salsa
1/2 Cup cilantro, chopped
1 or 2 Cloves garlic, minced or pressed
1 jalapeno chile pepper, seeded and finely minced
1/2 Small onion, small chop
2 Medium tomatoes -- seeded and diced
1 Teaspoon red wine vinegar
1 Teaspoon olive oil
1/4 Teaspoon salt
Place the chopped cilantro in the bowl, add the garlic
and minced chile and chopped onion. Dice the tomatoes (2 or 3) and combine all. Stir in vinegar, oil and salt/pepper to taste. Can be prepared up to 4 hours in advanced. Cover tightly and refrigerate. Drain any liquid and correct seasoning before serving.
Serve with the baked tortilla chips
