Homemade Enchilada Sauce

1 tbl. Oil or lard
1 clove garlic
salt
1 tbl. Flour
1 cup red chili powder
1 cup chicken broth (can use vegetable or water)
cumin and oregano, to taste
salt and pepper, to taste


Add oil to your pan, add a clove of garlic that you've mashed with some salt. Stir for a minute or so. Before it starts to brown, add flour and cook for a few minutes just to get the raw taste out. You don't need to brown it.

Mix together chile powder and chicken broth. Add this mixture and stir. It will boil and bubble. Cook a little. Add more chicken broth... until it's soupy or the consistency you like. Add cumin and oregano to taste. Some black pepper. Simmer on a very low flame (even heat it up and turn it off) for a half an hour. Salt to taste. It will taste hotter on the stove than it does on your finished product. The cheese etc really make it much milder.

A variation is to brown half a pound of hamburger and half a finely diced onion, drain of the grease and add to the sauce during the simmer. This adds some good flavor.

Can add a 1/4 cup of beer during the simmer. Also adds good flavor.
