Spanish Rice

Spanish Rice  

2 TBL. oil 
2 tsp. minced onion 
1 cup uncooked long grain rice 
3 cups water + 3 beef bouillion cubes 
1 (8 oz.) can tomato sauce 
1 cup canned diced tomatoes 
1 tsp. salt 
1/4 tsp. black pepper 
1/4 tsp. seasoning salt 


Place oil in saucepan. Add onion and rice and cook until rice is slightly 
browned (will also have a NUTTY smell). 

Add rest of ingredients. Cover and simmer about 45 minutes or until liquid
(or most of liquid) is absorbed. Sprinkle with grated cheese, if desired,
before serving.
