Blue Corn Tamale

1 cup blue corn masa harina
1/2 cup plus 1 Tbsp milk
1 cup plus 1 Tbsp butter at room temperature
1/2 tsp baking powder
3/4 tsp salt
1 cup cooked white corn kernels
1 Tbsp minced basil
3 Tbsp minced chives
2 Tbsp minced parsley
1 Tbsp minced mint
1/3 cup chopped watercress
4 large dried corn husks, soaked in hot water until pliable


Mix the masa harina and milk together with a spoon or whisk. In a large bowl, whisk together the butter, baking powder, and salt until light and fluffy. Incorporate the masa in 2 oz (4 tablespoon) increments, whisking until light and fluffy, about 10 to 15 minutes total. Fold in the corn, herbs and watercress. Divide masa evenly between the corn husks, roll and tie tamales, and steam for 30 minutes. Let cool slightly and serve.
