Beer Batter

1 can beer
1 1/4 cups all-purpose flour
2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon baking powder
Pour beer into a bowl; add flour.
Mixture will foam.
Stir in salt, paprika and baking powder.
If using to fry fruit, you may want to use cinnamon or nutmeg instead of paprika.
Mixture will thicken as it stands.
Make this at least 1 hour before using.
It will keep in refrigerator for 3-4 days.
Yield: about 2-1/2 cups batter.
Serving Ideas : Use as a general-purpose batter.
Notes: Use this beer batter for frying almost anything: eggplant, zucchini, fish, mushrooms, onion rings, even fruit such as apple rings and fresh pineapple chunks.

Crisp Coating Mix

3 Cups Corn flake crumbs
1 Cup Wheat germ
1/2 Cup Sesame seeds
4 Teaspoons dried parsley, crushed
1 Tablespoon Paprika
2 Teaspoons Salt (opt)
1 Teaspoon Dry mustard
1 Teaspoon Celery salt
1 Teaspoon Onion powder
1/2 Teaspoon Ground pepper
In a large bowl, combine all ingredients.
Stir with a wire whisk until evenly distributed.
Pour into a 5-cup container with a tight-fitting lid.
Seal container.
Label with date and contents.
Store in a cool, dry place.
Use within 2 months.
Yield: About 4-1/2 cups Crisp Coating Mix.
