  Blackened Seafood Spices

  1 Tbl. sweet paprika 
  2 1/2 tsp. salt 
  1 tsp. onion powder 
  1 tsp. garlic powder 
  1 tsp. ground red pepper 
  3/4 tsp. white pepper 
  3/4 tsp. black pepper 
  1/2 tsp. dried thyme leaves 
  1/2 tsp. dried oregano leaves 

That's the mixture that goes on redfish or pompano cut about 1/2 thick. 

This process of cooking will really create a LOT of smoke so be sure you 
have your vent going FULL blast.
