Buttermilk Baking Mix

The following recipe is from "Confessions of an Organized Housewife" by Denise Schofield---
Buttermilk Baking Mix

10 1/2 cups flour
1/4 cup baking powder
1 1/2 Tbl. salt
1/2 cup sugar
2 cups shortening
1 cup buttermilk powder
1 1/2 tsp. baking soda


In a large bowl, mix all ingredients with an eletric mixer until particles are small and uniform in size. Store on a shelf in a tightly-covered container. Makes 13 cups mix. Storage life is approximately 3 months.

Buttermilk Pancakes:
2 cups baking mix
1 2/3 cup milk
1 egg


In mixing bowl, combine all the ingredients and beat until smooth. (if thinner pancakes are desired, add more milk.) Slowly heat griddle or heavy skillet. when using an electirc griddle, preheat to 400'. Use 1/4 cup batter per pancake. Makes 18 (4 inch) pancakes.


Buttermilk Waffles:
2 cups baking mix
1 egg
1 2/3 cups milk
2 Tbl. salad oil


Preheat waffle iron. Meanwhile, combine ingredients and beat until mixture is smooth. For each waffle, pour batter into center of lower half of greased or nonstick waffle iron, until it spreads to 1 inch from the edge. Bake until waffle stops steaming (or follow manufacutures structions).

Makes 2 very large or six smaller waffles.

Buttermilk Chiffon Waffles:
2 eggs, separated
1 cup milk
1/4 cup salad oil
2 1/3 cups baking mix
2 Tbl. sugar


Preheat waffle iron. With mixer beat egg whites until soft peaks form when beater is raised. In another bowl beat egg yolks, milk and salad oil until well combined. Gradually add baking mix and sugar. Beat until smooth. with rubber spatula, fold egg whites into batter, just until combined (leave a few fluffs). Bake same as buttermilk waffles.

Biscuits:

2 cups baking mix
2/3 cup milk

Preheat oven to 450'. In mixing bowl, combine baking mix and milk. Stir with fork until the mixture becomes a soft dough. Beat the buttermilk dough 15 stokes. The dough will be stiff and sticky. Knead dough 8-10 times until smooth. Roll out the dough until it is 1/2 inch thick. Cut with floured biscuit cutter. Bake on greased baking sheet for 10-15 minutes. This recipe makes 12(2-inch) biscuits.
