Grilled Chicken Martin
Kernels from 5 cooked ears of corn (about 2 1/2 cups) or equivalent amount of frozen corn, thawed
1/3 cup finely chopped onion
2 2/3 cups dry white wine
1 1/2 tsp. chopped fresh coriander (cilantro)
1/3 cup honey
1/3 cup brandy
1 tsp. minced garlic
2 1/4 tsp. onion powder
Black pepper
4 boned chicken breasts (6 oz. each)
Combine all ingredients except chicken in a saucepan and simmer for 20 minutes; cool.
Marinate chicken breasts in corn marinade for at least 4 hours; drain.
Grill chicken over charcoal fire just until firm and opaque, turning several times.
