Grilled Vegetables Vinaigrette
Veggies:
2 peppers (green, red, etc) cut into quarters
4 oz. mushrooms (portobello or big white) whole
2 small zucchini cut lengthwise
2 small eggplants cut lengthwise
Vinaigrette:
6 Tbl. veg oil
6 Tbl. vinegar
2 Tbl. tarragon
1 tsp. salt
1 tsp. pepper
1 tsp. sugar
Whisk together the vinaigrette ingredients.
Add veggies, toss to coat.
Place veggies on medium heat grill. Turn occasionally, brush with vinaigrette until veggies are tender when pierced with fork. You can cut into smaller pieces and serve.
