Grilled Lobster with Herb Butter
Yield: 4 servings

2 large fresh lobsters
1/2 cup butter softened
2 tbsp. lemon juice
1/4 cup finely chopped herbs (chives, tarragon, dill)
Salt and cayenne pepper


Plunge lobsters in a large pot of boiling salted water or court bouillon. Cook for 1-2 minutes, until lobster's color has turned bright red / pink. Remove from pot, then use a large knife to cut through lobster to divide it into 2 parts.

Cook lobsters over a hot charcoal grill, meat side down, for about 7 to 10 minutes.

Mix together lemon juice, chopped herbs of your choice, and butter.

Turn lobster over and grill backside (shell) for about 3 minutes. Brush with herb-butter mixture. Season with some salt and cayenne pepper, then turn over and grill meat again for about 2 minutes.

Serve with grilled corn and additional herb butter.
