Broiled Pork Chops

6 (1.5") thick pork chops -- lean
1/4 cup Flavored Oil -- * see note
salt and pepper -- to taste


Preheat broiler or grill. Liberally brush both sides of each chop with oil.

Broil (or grill) 5 minutes on one side and 7 minutes on the other, seasoning with salt and pepper as you turn. Remove from heat and serve.

Note: You may also fry pork chops in a heavy, preferably cast-iron, skillet over very high heat for the same cooking time.

Notes : * To make flavored oil, place 1 cup good quality olive oil into a small heavy saucepan that has been preheated over medium-high heat. Add 4 garlic cloves that have been peeled and crushed. Barely simmer until garlic is just beginning to brown. Remove and discard garlic. Pour oil into a clean container and reserve, at room temperature, to use as flavored oil for frying and sauteing.
