Busch's Grove Restaurant Sweet Sour Barbecued Ribs

1/2 cup olive oil
1/2 cup soy sauce
1 tablespoon lemon juice
1 tablespoon liquid smoke
1 tablespoon white vinegar
2 slabs pork baby back ribs -- 1 1/2-2 lbs.
Barbecue sauce -- optional


For basting sauce: In a small bowl, stir together olive oil, soy sauce, lemon juice, liquid smoke and vinegar.

In a covered grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place ribs on grill rack over drip pan, but not over coals. Brush with sauce. Lower the grill hood. Grill ribs for 1 hour or till the slabs of pork baby back ribs are well done, turning and basting the ribs with the sauce every 15 minutes. Brush the meat with your own choice of barbecue sauce during the last few minutes of cooking, if you like.

Makes 4 servings.

Note: To test for medium heat, you should be able to hold your hand over the heat at food height for 4 seconds before having to pull away.
