Grilled Salmon
6 salmon steaks or 2 pounds fillets (skinned)
Olive oil or melted unsalted butter
salt
fresh ground pepper
Prepare a charcoal fire in grill or bar-b-que.
Rinse salmon under cold water and pat dry with paper towels.
Brush the fish all over with olive oil (extra-virgin) or
melted butter and season to taste with salt/pepper.
Grill the fish, turning and basting occasionally with the oil or butter, until the flesh is just opaque - about 7 to 10 minutes - depending on thickness.
To add extra flavor, you can use fresh herbs (dill, sage, fennel tied up in bundles) and use as a brush to add the oil
or butter to fish.
