Mustard Maple Salmon
Cooking Light Annual Recipes 2000, page 203

3 tablespoons Dijon mustard
3 tablespoons maple syrup
1 tablespoon balsamic vinegar
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
4 (6 oz.) salmon fillets, about one inch thick
cooking spray


Combine first 5 ingredients in a large zip-top plastic bag; add salmon. Seal and marinate in refrigerator about 20 minutes.

Prepare grill or broiler.

Remove salmon from bag, reserving marinade. Place salmon on a grill rack or broiler pan coated with cooking spray, and cook 6 minutes on each side or until fish flakes easily when tested with a fork; baste salmon occasionally with reserved marinade. Yield 4 servings
