Tuna and Shark Kabobs

1 pound large cubed tuna
1 pound large cubed shark
1/2 cup apricot nectar
1 tablespoon lemon juice
1 tablespoon lime juice
1/4 cup olive oil
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon thyme leaves
1 tablespoon chopped cilantro
2 green bell peppers, cubed
1 yellow bell pepper, cubed
12 mushrooms
12 cherry tomatoes
1 Spanish onion, cubed
1 zucchini, sliced thick


Cut the fish into 3/4-inch cubes. Place the cubes in a mixing bowl.

Blend the apricot, lemon, lime, oil, Worcestershire, salt, thyme and cilantro. Pour the marinate over the seafood. Marinate in the refrigerator for 12 hours or overnight.

Soak bamboo skewers for 20 minutes in water. Alternate onto skewers the fish, peppers, mushrooms, tomatoes, onions and zucchini. Grill over medium heat on a broiler for 8 to 10 minutes; brushing with marinate.

Serves 6.
