posted by Joy 06-27-98 3:42 PM Smoked turkey 1 8-10 lb. turkey 1 onion 2 bay leaves 1/2 cup white wine 1 recipe Super Smoking Sauce Super Smoking Sauce 1 lb. margarine 2/3 cup sherry 2 Tbl. Worcesteshire sauce 2 Tbl. soy sauce 2 cloves garlic, finely chopped 1/2 cup parsley 2 tsp. salt 1 cup water Combine all ingredients in heavy saucepan and bring to a boil. Lower heat and simmer for 30 minutes. Prepare smoker according to directions. Rinse turkey, pat dry and pat liberally with oil. Place onion, bay leaves and wine in water pan with hot water. Place water pan in smoker, and turkey on grid. Paint turkey with smoking sauce. Cook for 3 1/2 hours. Paint turkey again and cook for additional 3 1/2 hours. Cool and slice.
