Herbed Tuna Steak with Black Bean Confetti Relish for one

1 Tbl. minced shallots
1 Tbl. lemon juice
1/4 tsp. coarsely ground black pepper
1/8 tsp. dried tarragon
1/8 tsp. dried oregano
1 (6 oz.) tuna steak 3/4 inch thick
cooking spray
Black Bean Confetti Relish


Combine first 6 ingredients in a small dish; cover and marinate tuna in refridgerator for 30 minutes. Prepare Grill or Broiler. Place fish on grill rack or broiler pan coated with cooking spray. Cook 2 minutes on each side until fish is done. Serve with Black Bean Confetti Relish.


Black Bean Confetti Relish:
2/3 cup canned black beans, rinsed and drained
2 Tbl. frozen whole kernel corn
2 Tbl. diced yellow bell pepper
2 Tbl. diced plum tomato
1 Tbl. minced shallots
1 Tbl. lemon juice
1 tsp. olive oil
1/4 tsp. ground cumin
1/4 tsp. coarsely ground black pepper
1/8 tsp. salt


Combine all ingredients in a bowl. Serve chilled or at room temperature. This can be served with chips also.
