Pasta with Ham and Collard Greens
2 pounds collard greens, cleaned, stalks removed, and chopped
4 cups water
1 tablespoon Dijon mustard
Juice of 1 lemon
1 pound bow ties (pasta)
3 tablespoons extra virgin olive oil
2 cloves garlic, chopped
1 medium onion, chopped
1 cup lean ham chunks
One (19-ounce) can cannellini beans, undrained
A few dashes hot pepper sauce
Salt to taste (optional)
Freshly ground black pepper to taste
1 cup pasta water
In a large saucepan, cook the greens in 4 cups of water which you bring to a boil.
Cover and simmer for 40 minutes. Drain the water and reserve it to cook the pasta.
Put the greens in a large bowl and mix the mustard and lemon juice together.
Toss with the greens.
Cook the pasta. Reserve 1 cup of the pasta water when draining.
Meanwhile, in a large skillet, saute the garlic, onion, and ham in the olive oil until the onion is translucent.
Add the beans, pepper sauce, salt, pepper, and pasta water.
Simmer for 8 to 10 minutes and add the greens. Toss with
the pasta and serve.
Serves 4 to 6.
