Chunky Cheese Macaroni
1 lb. elbow macaroni
6 tablespoons butter
3 tablespoons flour
salt to taste
1 1/2 teaspoons chili powder
pepper to taste
3 cups milk
minced onion
1 lb. grated cheddar cheese
Preheat oven to 375 degrees F. Cook macaroni til tender.
In a small saucepan over low heat, make a roux with butter and flour and seasonings. Stir in milk and onions and grated cheese. Pour over macaroni and mix through. Bake in a 375 degree oven for 40 minutes.
Serves 8-10.
