Baked Ziti and Sausage Casserole

2 1/2 c. ziti macaroni
1/2 lb. sweet or Italian sausage
1 (15 oz.) Ricotta cheese
1 (8 oz.) pkg. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
1 egg
1 Tbsp. chopped parsley
1/2 tsp. salt
1/8 tsp. pepper
1 (32 oz.) jar spaghetti sauce


Cook ziti macaroni according to package directions; drain.

Brown sausage for 7 to 8 minutes on each side. Cut into 1/4-inch slices.

In medium bowl, combine Ricotta cheese, 4 ounces Mozzarella cheese, Parmesan cheese, egg, parsley, salt and pepper. Blend well.

Preheat oven to 400 degrees.

In a 9 x 13-inch pan, spread about 1 1/2 cups spaghetti sauce over bottom. Layer half the cooked ziti over sauce, then the cheese mixture. Cover the cheese layer with the sausage slices and then the remaining ziti. Top with remaining spaghetti sauce. Bake for 30 minutes. Sprinkle with remaining Mozzarella cheese and cook 10 minutes longer. Cover loosely with aluminum foil if browning too quickly. Let stand 10 minutes before serving.

Makes 8 servings.
