Chocolate Pasta in White Chocolate Pudding with Raspberry Sauce

7 cups milk
1 cup sugar
1 cup white chocolate chips
1 cup milk
1 cup cornstarch
4 teaspoons vanilla extract
chocolate pasta (rotini style)
Raspberry Sauce (see below)


Heat 4 cups milk in heavy pan until steam rises from the surface. Remove from heat. (For microwave preparation; heat milk in microwavable bowl until steam appears.) Add sugar and white chocolate to hot milk and stir to dissolve.

In a medium bowl, whisk cornstarch with 1 cup cold milk. Add to white chocolate mixture, using a rubber spatula to be sure all cornstarch is removed from bowl.
(If you used a microwave for the first steps, transfer all to a heavy pan at this point.)

Cook gently, stirring occasionally, over medium heat for 7 to 10 minutes until pudding thickens and coats back of spoon. Remove from heat and stir in vanilla. Pour into a serving dish to cool, stirring once or twice to release steam. Cover with plastic wrap touching surface of pudding and refrigerate.

When pudding is chilled, cook pasta according to package directions; rinse under cold water and drain. Gently stir the pasta into the cold pudding and replace plastic wrap on surface or serve immediately with raspberry sauce.


Raspberry Sauce:
12 ounces fresh or fresh raspberries
1/2 water
3/4 cup sugar
1 T. lemon juice
1 T. cornstarch mixed in 2 T. cold water


Combine raspberries, water sugar and lemon juice in small pan and cook over medium heat 7-10 minutes. Strain using a fine sieve to remove seeds. Return the juice to the pan and whisk in the cornstarch mixture. Place over medium heat and stir just until thickened.

Okay, that's a combination of many recipes. Here's what I didn't like:
The pasta isn't sweet (can be used to make chicken mole!), which was okay, but the pudding wasn't sweet enough, so I'd increase that to 2 cups.

By the time we actually ate it, the pudding had turned into a gelatinous mess. Probably too much cornstarch combined with starch from the pasta, maybe?
The raspberry sauce was perfect!

Anyway, everyone was kind...they ate it and oohed and ahhed over it...even went back for seconds. Quite possibly, most of them didn't realize how bad it was.
Still, I believe it has possibility.
