Pasta Pavarotti

1 pound fettucine or spaghetti
flour
3 tablespoons olive oil
2 chicken breast halves without skin -- diced
6 mushrooms -- sliced
3 green onions -- sliced
2 zucchini -- sliced
1/4 cup sun-dried tomatoes
2 to 3 oz. proscuitto, slivered
3 cloves garlic -- minced
1/4 cup white wine -- optional
1/2 cup heavy cream
3 tablespoons minced parsley
Parmesan cheese


Cook pasta while preparing sauce.

Toss chicken in flour and shake off excess. Brown in olive oil and set aside. Saute mushrooms, zucchini, green onions, and garlic until mushrooms begin to brown; add wine and cream, sun-dried tomatoes and proscuitto. Bring to boil and when cream begins to thicken, return chicken to pan and toss with pasta. Serve with parmesan cheese and parsley.
