Pasta with Prosciutto Red Sauce

3/4 lb. ziti
1/4 lb. prosciutto
24 asparagus spears (1 1/2 lb.)
1 1/2 lb. ripe tomatoes
1/4 cup olive oil
1 Tbsp. minced garlic
2 cups fresh basil
1/4 cup Parmesan cheese


Cut the asparagus on the bias into about 1 1/2 inch pieces. Blanch them for one minute in a pot of boiling water. Drain, saving 1/2 cup of water.

Cook ziti till al dente. Chop prosciutto. Saute garlic in olive oil. Add prosciutto. Add diced tomatoes. Add fresh basil and asparagus. (You can chop the basil or not, your choice). Add ziti and toss. Add a bit of cream or butter, or, if you're watching your weight, some of the reserved water from the asparagus. Toss the whole thing and just heat a bit to blend the flavors. Serve.
