Linguine with Tomato Basil Sauce

4 large tomatoes, cut into cubes
1 lb. Brie or Feta (your choice)
1 cup fresh basil, cut into strips
4 cloves garlic, minced
1 cup olive oil
1/2 tsp. salt
1/2 tsp. black pepper


Combine tomatoes, cheese, basil and garlic with 1 cup oil. Add salt and pepper. Let sit, covered, at least 2 hours at room temperature.

Cook linguine in 6 qts. water, 1 Tbl. oil and 2 tsp. salt until tender. Drain and toss with tomato mixture. Serve at once with pepper mill and freshly grated parmesan.
