Jack-In-The-Macaroni Bake

2 quarts water
1 tsp. salt
1 (8-oz.) pkg. elbow macaroni
2 Tbl. butter or margarine
1/4 cup chopped onion
1/4 cup chopped sweet red pepper
2 cups (8 oz.) shredded Monterey Jack cheese with jalapeno peppers
1 (10-3/4 oz.) can cream of celery soup, undiluted
1/2 cup sour cream
Chili powder
Garnish: celery leaves


Preheat oven to 350 degrees.

Bring water and salt to boil in a large Dutch oven; stir in macaroni. Return to a rapid boil, and cook 8 to 10 minutes or until tender; drain. Rinse with cold water; drain.

Melt butter in a Dutch oven; add onion and red pepper. Cook over medium heat, stirring constantly, until crisp-tender. Remove from heat. Stir in cheese, soup, and sour cream. Stir in macaroni; spoon into a shallow 2-quart casserole. Sprinkle with chili powder. Bake at 350 degrees for 30 minutes. Garnish, if desired. Yield: 6 servings.
