Mom’s Macaroni and Cheese
1 lb. pasta (ziti is good)
4 cups milk
1/4 cup (1/2 stick) unsalted butter
6 Tbl. flour
1 tsp. paprika
Salt and pepper
6 oz. shredded Cheddar cheese
6 oz. shredded Monterey Jack cheese
Cook pasta al dente; drain
Preheat oven to 350 degrees.
Meanwhile, heat milk just until hot. Make a roux with butter and flour. Add paprika and salt and pepper to taste. Slowly pour in hot milk, whisking until smooth. Stir in cheeses and allow to melt.
Combine pasta and sauce. Spoon into large casserole dish or individual soup tureens. Can top with crumbled blue cheese, tomatoes, or bread crumbs.
Bake at 350 degrees for 25-30 minutes. Garnish with Italian parsley.
Hint: Cheese is easier to shred if placed in the freezer for 30 minutes. Also, spray the grater with cooking spray for easier cleanup.
