Cheese-Stuffed Manicotti

1 package manicotti shells
1 egg, beaten
1 (15-oz.) carton ricotta cheese
6-ounces shredded Mozzarella cheese
6-oz. shredded Cheddar cheese
1/2 cup grated Parmesan cheese
1 tbsp. chopped parsley
Dash of nutmeg
Salt and pepper to taste
1 quart Prego spaghetti sauce or your own
1/4 cup grated Parmesan cheese


Preheat oven to 350° F.

Cook manicotti shells as package directs, but just enough to make flexible. Don't over-cook or they will fall apart. Drain and rinse them. Set aside.

Mix together remaining 8 ingredients and fill the manicotti shells. (You can either stuff them using your fingers, or the easier way, is to slice them in half and fill. Lay them in baking dish cut-side down).

Cover bottom of a 9x13" baking dish with a thin layer of spaghetti sauce. Arrange the filled manicotti in the dish. Cover with remaining sauce and sprinkle with extra mozzarella cheese and grated Parmesan.

Cover dish with foil. Bake at 350 F. for 30 minutes. Uncover and continue baking another 15 minutes.

Serves 6
