Homemade Manicotti

Pasta:
1 cup flour
1 cup water
1 egg
pinch of salt


Mix together and pour into frying pan like you're cooking pancakes. Texture should be very thin. Do not Brown. Cook just long enough to form.

Filling:
1 pound rocotta cheese
2 eggs
1/2 cup Italian grated cheese
1/4 cup parsley flakes
salt and pepper to taste


Preheat oven to 350° F.

Mix filling ingredients into bowl. Lay pasta flat and fill with one (1) tablespoon of filling. Fold each side towards middle. After this is completed, line a square casserole dish with your favorite spaghetti sauce (homemade, of course) and put manicotti side by side with folded side down. Top with more sauce.

Bake in oven about 350 degrees for about forty-five (45) minutes.

Makes about 8 Manicotti. For larger amount, double recipe.
