Manicotti
8 manicotti shells, parboiled for 5 minutes
1 tbsp. canola oil
1/2 of a small red pepper, finely diced
2 or 3 green onions, finely chopped
1 clove garlic, finely minced
2/3 lb. (325 grams) extra smooth ricotta cheese
1 cup shredded mozarella cheese
1/3 cup grated parmesan cheese
1 egg beaten
approx. 3 cups spaghetti sauce
1 cup water
Preheat oven to 350° F.
Saute red peppers, onions and garlic til soft. Cool slightly.
Combine cheese, red pepper mix and the beaten egg.
Combine spaghetti sauce and water and pour half into a 9 x 13 inch pan.
Stuff shells with cheese mixture and place in sauce in a single layer.
Pour remaining sauce over top.
Sprinkle with more parmesan cheese, if desired.
Cover with foil and bake @ 350 deg. for 45 - 50 minutes.
