Chilled Pasta, Roast Garlic and Tomatoes
(Jimmy Schmidt's recipe)

1 head of garlic
1 tablespoon olive or other oil (approximate)
3/4 pounds pasta, any shape
1/2 cup virgin olive oil, divided
8 medium tomatoes, peeled, seeded and diced
1/4 cup chopped fresh basil
Salt to taste
Freshly ground black pepper to taste
3/4 cup grated Parmesan Cheese
4 sprigs of fresh basil


Preheat oven to 400° F.

In an oven-proof dish or skillet, coat the head of garlic with olive or other oil. Place in lower rack of oven and cook until just tender,about 30 minutes, depending on size. Set aside to cool.

Cook the pasta according to package directions. Transfer to a strainer, drain and rinse with tepid water.

Transfer to a medium size bowl. Add 1/4 cup of olive oil and toss to coat the pasta. Chill in refrigerator.

Peel and mince garlic. In a medium size bowl, combine the remaining 1/4 cup of olive oil with the garlic, tomatoes and chopped basil. Season with salt and pepper. Add pasta, toss and mix well. Distribute the pasta to the serving plates. Top with grated Parmesan cheese. Garnish with the basil sprigs and serve.
