Noodles Romanoff 2

1 (8-oz.) package wide egg noodles
3 Tbl. butter, divided
2 Tbl. minced onion
2 Tbl. flour
1/2 tsp. dry mustard
1 tsp. salt
Dash of cayenne pepper
1 cup milk
1/2 tsp. Worcestershire sauce
Dash of hot sauce
4 oz. sharp Cheddar cheese, grated (1 c)
1 cup sour cream
1 cup cottage cheese
1/4 cup dried bread crumbs


Cook noodles in lightly salted boiling water according to package directions. Add 1 Tbl. butter to boiling water. Drain noodles.

Preheat oven to 350 degrees F. Butter an 8-cup baking dish or casserole.

Melt remaining 2 Tbl. butter and saute onion until transparent. Stir in flour, dry mustard, salt, and cayenne pepper. Cook, stirring constantly, for 1 minute. Add milk, all at once, and stir until mixture thickens. Add Worcestershire sauce, hot sauce, and Cheddar cheese and stir until cheese melts. Fold sour cream and cottage cheese into sauce, then fold in hot cooked noodles.

Spoon into baking dish and top with bread crumbs. Bake 15 minutes longer.
