Orzo with Butter, Garlic and Parmesan
2 Tbl. butter
1 cup Orzo pasta
2 Tbl. finely chopped onion
2 1/2 cups chicken stock
1 Tbl. fresh chopped garlic
2 Tbl. fresh chopped parsley
2 Tbl. parmesan cheese
In skillet over medium high heat, melt butter. Stir in orzo, onion, and garlic. Cook stirring frequently until orzo is lightly browned, about three minutes. Stir in chicken stock and bring to a boil. Reduce heat, cover and simmer 12 minutes or until most liquid is absorbed. Stir in parsley and Parmesan and serve.
