posted by Angela22 07-19-98 6:55 AM Orzo Pasta with Mushrooms 2 cups orzo - cooked and drained 4 tbls. olive oil 2 cups fresh mushrooms - chopped 4 garlic cloves - minced 1 large sweet onion - sliced 2 tsp. olive oil 2 Tbls. balsamic vinegar 1 tbl. fresh thyme 4 tbls. Parmesan cheese salt and pepper to taste Place 4 tbls. of olive oil in a large skillet. Saute mushrooms on high heat until softened. Add garlic and cook until juices dry up and mushrooms brown. Preheat oven to 400 degrees. Toss sliced onions with 2 tsp. olive oil and the balsamic vinegar and place on cookie sheet. Roast the onions in the oven until they start to carmelize but retain crispness. Combine orzo, mushrooms, onions and remaining ingredients.
