Orzo Pilaf

Orzo Pilaf

3 cups chicken broth
1 cup orzo
4 slices bacon
1/2 cup chopped onion
1 minced garlic clove
1/2 cup grated carrots
1/4 cup combined finely diced red and green pepper
1/4 cup freshly grated Parmesan cheese
salt and pepper to taste


Bring chicken broth to a boil. Stir in pasta. Boil about 10 minutes or until tender: drain if necessary (if only a little liquid remains leave it in and it will be absorbed by the time you get it to the table).

Meanwhile, cook bacon in large skillet until crisp. Remove from skillet; crumble and set aside. Drain all but 3 tablespoons of drippings from skillet. Cook and stir onion, garlic, carrots and peppers in reserved drippings until tender but not browned. Add pasta.

Place in serving dish and add in Parmesan and bacon crumbles.
