Farfalle with Ricotta and Asparagus
1-lb farfalle
1-1/2-lbs asparagus, cut into 1-in lengths
1-1/2-cups ricotta cheese
3-tbs butter
3/4-cup grated Parmesan cheese
3/4-tsp salt
1/2-tsp black pepper
In a large pot of boiling, salted water, cook pasta for 12 minutes. Add asparagus to pot and cook until pasta and asparagus are just done, about 3 minutes longer.
Drain. Toss with ricotta, butter, Parmesan, salt and pepper. Serve immediately.
