Tried and True Recipe for Noodles by Hand

4 medium eggs
4 half eggshells water
2 tsp. baking powder
1/2 tsp. salt
flour (can be white, wheat, amaranth, spelt, triticale, rice, bean, etc.)


Mix eggs, water, baking powder and salt thoroughly. Add enough flour to form stiff dough. (I'm not saying how much flour, because different flours have different absorbency and will require different amounts. Just add til it "feels" like a stiff dough.) Roll out thin and cut into strips. Let dry. Drop into boiling chicken, ham, or beef broth. Stir lightly. Then cover and boil, without stirring, until tender (approx.. 10 minutes).


Basic Pasta Recipe for Mixer
Approx. Yield : 2 1/3 cups

2 cups All purpose flour
3 each Whole eggs
1/2 tsp. Salt

Mix all ingredients in mixer with dough paddle until well mixed. Cut into desired pasta. Cook in boiling salted water.


Everyday pasta recipe:
1 1/2 cup flour, half samolina and half unbleached flour
2 extra large eggs
1 tsp.
olive oil and water to make right consistency. Make it in a food processor. Put flour and egg in machine and process for 30 seconds. Then add oil. If not right - add water. It never fails.


Egg Pasta for Food Processors:
2 cups (500 mL) all purpose flour
3 eggs
2 teaspoons (10mL) olive oil
1/4 teaspoon (1 mL) salt
1 to 2 Tablespoons (15 to 30 mL) warm water
extra flour


Insert steel blade. Place 2 cups flour, eggs, oil and salt in bowl; process until thoroughly blended, 3 to 5 seconds. With machine running, add 1 to 2 Tablespoons warm water through reed tube; process until dough forms ball.

Once dough has formed ball, let dough spin around bowl 15 to 20 seconds. Roll dough ball in extra flour. Cover with plastic wrap and let stand 30 minutes.
