Linguine with Asparagus
1 chopped onion
1 1/2 tsp. minced garlic
2 TBS olive oil
1 TBS sweet butter
1/2 lb. fresh asparagus, sliced thin diagonally
2 TBS dry white wine
2 TBS chicken broth
2 TBS lemon juice, or more to taste.
1/4 C toasted pine nuts
2 TBS grated Parmesan
6 oz linguine
In a heavy skillet, cook the onion and garlic in the oil and butter over moderate heat, stirring, until mixture is golden. Season with salt and pepper. Add the asparagus to the same skillet and cook over moderate heat, stirring for 2 minutes. Add the pine nuts, wine and broth and cook for another 2 minutes. Remove skillet from heat, add 1 TBS water, the lemon juice, the cooked linguine and the Parmesan. Toss well. Serves 2.
