Pasta: Macaroni with Four Cheeses

Macaroni with Four Cheeses
(from "Canadian Living's Best Pasta")

3/4 C. shredded mozzarella cheese
3/4 C. shredded Cheddar cheese
3/4 C. shredded Gruyere cheese
1/3 C. freshly grated Parmesan cheese
2 3/4 C. macaroni
3/4 C. light cream
Chopped fresh parsley
Pepper


In bowl, combine mozzarella, Cheddar, Gruyere and half of the Parmesan; set aside.

In large pot of boiling salted water, cook macaroni for 8 - 10 minutes or until tender but firm; drain well and return to pot.

Add cheese mixture and cream; cook over low heat for 1 minute until cheese has melted. Sprinkle with remaining Parmesan and parsley to taste. Season with pepper to taste. Makes 4 servings.
