Pasta: Oodles of Noodles

Oodles of Noodles
(from "Canadian Living's Best Pasta")

1 (28 oz) (796 ml) can tomatoes
1/2 C. chopped onion
1 tsp. dried basil (optional)
1/4 tsp. (approx.) pepper
4 oz. light cream cheese, cubed
2 3/4 C. fusilli or macaroni
1/4 C. Freshly grated Parmesan cheese
salt


In saucepan, bring tomatoes, onion, basil and pepper to boil; reduce heat and simmer for 15 minutes.

Pour into food processor or blander; puree. Add cream cheese, puree until smooth.

Meanwhile, in a large pot of boiling salted water, cook macaroni for 8 - 10 minutes or until tender but firm; drain well. Toss with sauce; sprinkle with Parmesan. Season with salt and pepper to taste. Makes 8 servings.
