Pasta in Lemon Cream Sauce
1 lb. pasta
1 1/3 cups heavy cream
1 tbsp. freshly grated lemon rind
1/2 cup butter, cut into pieces
2 tsp. lemon juice
1 1/2 cups freshly grated Parmesan cheese
1/2 tsp. freshly grated nutmeg
salt and pepper to taste
lemon wedges
Cook pasta (recommend angel hair or fettuccine) as directed, ad dente, drain.
Combine cream and lemon rind in a small, heavy saucepan.
Bring to a boil and allow to boil for 3 minutes.
Reduce heat to medium-low and whisk in pieces of butter.
Continue to whisk until all butter has melted.
Add lemon juice, Parmesan cheese, nutmeg, salt and pepper, continuing to whisk over low heat until cheese has melted.
Toss with hot pasta.
Serve immediately with lemon wedges.
4 main course servings. May also be used as a first course or a side dish.
