Salmon and Pepper Penne
1/2 cup heavy cream
4 cloves garlic, crushed
1/4 cup lemon juice
1/4 cup olive oil
2 Tablespoons fresh minced dill
2 Tablespoons fresh minced parsley
1/2 lb. penne
1 large red pepper in 2" long julienne strips
1 large green pepper in 2" julienne strips
1 small red onion, thinly slices
4-6 oz. smoked Salmon
Bring cream to boil over medium heat. Add garlic, simmer 15 minutes, reducing to about 1/4 cup.
Process in blender/food processor, adding lemon juice to blend.
With blender running, add oil in slow stream until emulsified.
Add herbs and salt and pepper to taste; reserve.
Cook penne according to package directions, drain and combine with sauce,pepper strips, onion and salmon pieces.
Mix gently and serve on hot plates with sprigs of dill for garnish
Serves 2.
